Beef and Ricotta Meatballs With Olympus Cheese Ricotta
For this recipe, you'll need:
- 1 pound ground beef
- 1 cup Olympus Cheese Ricotta
- 1/2 cup breadcrumbs
- 1/4 cup fresh parsley, chopped
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups marinara sauce
Directions:
- Preheat your oven to 375°F.
- In a large bowl, mix together the ground beef, Olympus Cheese Ricotta, breadcrumbs, parsley, egg, garlic, salt, and pepper. Mix until well combined.
- Using your hands, form the mixture into 1 1/2 inch meatballs.
- Place the meatballs on a baking sheet, and bake for 25-30 minutes, or until golden brown and cooked through.
- While the meatballs are cooking, heat up the marinara sauce in a saucepan over medium-high heat.
- Once the meatballs are done, serve with the warm marinara sauce. Enjoy!
Beef Ricotta Casserole
For this recipe, you'll need:
- 1 pound ground beef
- 1 1/2 cups Olympus Cheese Ricotta
- 1/2 cup onion, chopped
- 1/4 cup green bell pepper, chopped
- 1/4 cup red bell pepper, chopped
- 1 cup cooked rice
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 can (14 oz) diced tomatoes, undrained
- 1 cup shredded cheddar cheese
Directions:
- Preheat your oven to 350°F.
- In a large skillet, cook the ground beef over medium-high heat until browned. Drain any excess fat.
- Add the onion, green bell pepper, and red bell pepper to the skillet. Cook until tender.
- Stir in the cooked rice, Olympus Cheese Ricotta, salt, black pepper, garlic powder, onion powder, and diced tomatoes. Mix until well combined.
- Transfer the mixture to a greased 9x13 inch baking dish. Top with the shredded cheddar cheese.
- Bake for 25-30 minutes, or until heated through and the cheese is melted and bubbly.
