Ingredients:
- 1 pound Italian sausage, casings removed
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 1 sweet potato, peeled and diced
- 1 (14.5-ounce) can diced tomatoes
- 4 cups chicken broth
- 1/2 cup orzo pasta
- 1/4 teaspoon red pepper flakes
- salt and pepper to taste
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions:
- In a large pot or Dutch oven, cook the sausage over medium heat until browned, breaking it up into small pieces with a spoon as it cooks. Drain off any excess fat.
- Add the onion and garlic to the pot and cook for about 2-3 minutes, until slightly softened.
- Add the sweet potato, diced tomatoes (with their juices), chicken broth, orzo pasta, red pepper flakes, salt, and pepper. Bring the soup to a simmer and cook for about 15-20 minutes, until the sweet potato and orzo are tender.
- Stir in the Parmesan cheese and parsley. Taste and adjust seasoning as needed.
- Serve hot and enjoy!
