Ingredients:
- 16 oz. pasta (we used rigatoni)
- 1 large onion, chopped
- 4 cups of mixed vegetables (we used broccoli, cauliflower, and carrots)
- 2 cloves of garlic, minced
- 2 tbsp. olive oil
- 1 cup of milk
- 1 cup of vegetable broth
- 2 tbsp. all-purpose flour
- 2 cups of grated cheddar cheese
- Salt and pepper, to taste
Instructions:
Preheat oven to 375°F. Cook pasta according to package instructions and set aside. In a large pan, sauté onions and garlic in olive oil over medium heat for 5 minutes. Add mixed vegetables and continue cooking until they are tender. Add flour and stir to combine. Gradually add milk and vegetable broth, stirring constantly until mixture thickens. Add half of the cheese and stir until melted.
Mix the cooked pasta with the vegetable mixture until well combined. Pour the pasta and vegetable mixture into an 8x8 inch baking dish. Sprinkle the remaining cheese on top. Bake for 20-25 minutes or until cheese is melted and bubbly. Serve hot and enjoy!
Loaded Vegetable Pasta CasseroleIngredients:

- 1 jar of marinara sauce
- 2 cups of shredded mozzarella cheese
- Salt and pepper, to taste
Instructions:
Preheat oven to 375°F. Cook pasta according to package instructions and set aside. In a large pan, sauté onions and garlic in olive oil over medium heat for 5 minutes. Add mixed vegetables and continue cooking until they are tender. Add marinara sauce and stir to combine. Add cooked pasta and stir until ingredients are evenly mixed. Pour the pasta and vegetable mixture into a 9x13 inch baking dish. Sprinkle shredded mozzarella cheese on top. Cover baking dish with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 5 minutes or until cheese is melted and bubbly. Serve hot and enjoy!
