Oh, hello friends! Today I want to share with you a mouth-watering recipe that's perfect for the whole family: a creamy vegetable pasta bake. It's filling, it's nutritious, and it's packed with flavor that your taste buds will surely enjoy.
Ingredients:
- 1 pound of pasta (I used fusilli)
- 1 small onion, finely diced
- 2 cloves of garlic, minced
- 2 cups of mixed vegetables, finely chopped (I used broccoli, cauliflower, and red pepper)
- 1 cup of heavy cream
- 1/2 cup of grated Parmesan cheese
- Salt and pepper to taste
- Olive oil for cooking
Instructions:
- Preheat your oven to 375°F.
- Cook the pasta according to the package instructions, but make sure to not overcook it. Drain and set aside.
- In a large pot or Dutch oven, heat some olive oil over medium heat. Add the onion and cook until translucent, about 3-4 minutes.
- Add the garlic and cook for another minute.
- Add the mixed vegetables and cook until they're tender, about 8-10 minutes. Season with salt and pepper.
- Add the heavy cream and Parmesan cheese to the pot and stir until the cheese is melted and the sauce is heated through.
- Add the cooked pasta to the pot and stir until it's evenly coated with the sauce.
- Transfer everything to a baking dish and bake for 20-25 minutes, or until the top is golden and crispy.
- Serve hot and enjoy!
