Grilled Chicken with Lemon Orzo Pasta
Ingredients:
- 2 chicken breasts, pounded thin
- 1/2 cup olive oil
- 1/4 cup fresh lemon juice
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1 tablespoon minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 pound orzo pasta
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh mint
- 1/4 cup chopped red onion
- 1/4 cup capers, drained
- 1/4 cup crumbled feta cheese
Instructions:
- In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, garlic, salt, and pepper. Place the chicken in a shallow dish and pour the marinade over it. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
- Cook the orzo pasta according to the package directions, then drain and rinse under cold water.
- In a large bowl, combine the cooked orzo, parsley, basil, mint, red onion, capers, and feta cheese. Toss well.
- Heat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for 4-5 minutes per side, or until cooked through.
- Serve the grilled chicken with the lemon orzo pasta.
